Vineyards

Fruit for the 2006 Ruby-Throated Cabernet Sauvignon is sourced From the Clos LaChance Estate Vineyard in San Martin. The 80- acre Estate Vineyard was planted in 1999. Nearly 20 varietals were planted, along with 60 separate clones—providing Winemaker Stephen Tebb with a spice-rack of blending wines. Hot sunny days throughout the growing season, coupled with cool ocean breezes in the evenings, allow for increased grape hang-time, and the further development of flavors and complexities. Computerized vineyard maintenance and data recording systems (weather stations, leaf and soil sensors, automated irrigation and fertigation) were also installed onsite, ensuring the highest quality fruit possible.

Winemaking

The grapes were hand-picked, hand-sorted, destemmed and cold-soaked in open and closed-top stainless steel fermenters for 24-48 hours. The must was inoculated and pumped over twice daily at the beginning and the end of fermentation. Towards the peak of fermentation, Winemaker Stephen Tebb chose to increase pump-overs to four times per day, therefore increasing color and the wine was drained and pressed to tank. The wine settled for 48 hours and was racked to barrels. The barrel allocation consisted of 20% new French oak barrels and 10% new American oak barrels. Barrel aging lasted 12 months with two rackings.

Winemaker’s Tasting Notes

The nose on this wine opens up with bright Berry fruits. Plums, Tobacco and a subtle floral note. Full and rich on the palate, blueberries, blackberries and dried cherries are the major fruit flavors in this wine. Dried plums and a little Anise spice round off the wonderfully smooth finish. Moderate Tannins make this a wonderful wine to drink with and compliment many foods.

Blend: 77% Cabernet Sauvignon, 16% merlot, 3% Malbec, 2% Cabernet Franc, 2% Petite Verdot
